Is it just me, or does summertime make it easy to fall off the fitness and health bandwagon? Between traveling and indulging in meals out at restaurants, I’m the first to admit I’ve had a harder time sticking with healthy eats and a fitness routine the last month or so. But as we move into the fall season, I’m working towards getting back to my healthy-self including working out regularly and eating better. I’ve been whipping up some easy hashes with veggies, beans, some corn tortilla strips and any other items I have leftover in my fridge, and topping it with an over-easy or medium egg for added protein. I definitely stay full until that afternoon slump!
