The fresh mango slaw is simple to put together, and tastes creamy, yet light, thanks to the addition of Greek Yogurt. I love using Greek Yogurt as a substitute for cream or milk in recipes, as it generally lightens up sauces and adds some nice flavor.
You can even opt to make the Mango slaw prior to cooking the fish and chill in the fridge until you’re ready to garnish the baked fish. The combination of sweet mango with salty bell peppers and a little tang from the Greek Yogurt makes for a delicious seafood topping come dinnertime!

Baked Tilapia with Fresh Mango Slaw
Ingredients
Fish
- 2 Tilapia fillets from Sea Cuisine
- 1 Lemon juice & zest
- 1 tbsp Extra virgin olive oil
- pinch Salt & Pepper
Mango slaw
- ⅓ cup Extra virgin olive oil
- 1 Ripe mango, large Peeled, pitted and diced
- ½ Red bell pepper Diced. Can also use the roasted red bell peppers in a jar from Trader Joe's
- ¾ cup Greek yogurt, plain
- 1 tbsp Fresh cilantro chopped
- 1 tbsp Fresh parsley minced
- 2 tbsp Lime juice
- pinch Salt & pepper
Instructions
For slaw:
- Add salt & pepper to taste, plus extra-virgin olive oil
- Stir together, then add fresh lime juice and stir again until combined
For fish:
- Preheat oven to 400 degrees. Season tilapia with salt and pepper and place on foil on a baking sheet with parchment paper
- Pour over extra virgin olive oil and lemon juice/zest on fish
- Bake tilapia until fork-tender about 10-12 minutes
- Top baked fish filet with mango slaw, EVOO and a pinch of ground pepper. Serve with brown rice
