Creamy Pasta Carrabba

Ingredients
  

  • 3 Chicken breasts boneless & skinless
  • tbsp Butter
  • 1 tbsp Olive Oil
  • 2 tbsp Shallots chopped
  • ½ tbsp Garlic cloves finely chopped
  • ½ tsp White pepper
  • cups Heavy whipping cream
  • ½ cup Peas frozen or fresh
  • cups White mushrooms sliced
  • 1 tsp Kosher salt
  • ¾ cup Romano cheese may substitute Parmesan
  • 4 cups Fettucini pasta

Instructions
 

  • Wash and pat dry chicken breast, then season with salt & pepper
  • Grill or sauté breasts until cooked through
  • Slice cooked chicken breasts into 1" long strips, set aside
  • Boil a pot of water and toss in Fettuccini pasta
  • In a large skillet, heat olive oil and melt butter
  • Add in the sliced mushrooms, shallots and garlic
  • Sauté on medium heat for 3-4 minutes or until mushrooms have lightly browned
  • Add salt, white pepper and whipping cream and raise heat until sauce begins to boil
  • Lowe the heat and add in the sliced chicken and peas, incorporating them into the sauce
  • Strain pasta and add it to the sauce, stir to mix
  • Add Romano cheese to mixture and stir until it begins to melt
