Fall, where the temperatures begin to cool off and the days become shorter. When autumn truly rolls around here in Houston, I get a craving for rich and comforting recipes paired with delicious wines. Enter this creamy pasta Carrabba recipe that’s a yummy adaptation from one of my favorite local Italian restaurants (the ORIGINAL Rosie’s Carrabbas). It’s the perfect dish to serve to guests or family!
We don’t get much of a fall season in the Gulf Coast, so any little inkling of fall weather has us all whipping out the fall decor, cooking cozy food and pouring autumn-inspired drinks.
Our household loves a great bottle of wine, but we often don’t indulge in heavier varietals like Cabernet-Sauvignon or Malbec until the weather cools down. We love Layer Cake Wine, have you tried it? Their wines are filled with richly-layered flavors from some of the best winemaking regions across the world, yet we can try them all from the comfort of our home!


A few years ago, my husband Rick discovered bourbon-barrel aged wine. Since then we’ve been hooked! The particular aging process provides a richer, fuller-bodied flavor to the typical Cabernet Sauvignon flavor-profile. Layer Cake Bourbon Barrel Aged Cab is one of our favorites. Grapes from Northern California wine country are aged for three plus years in old, charred oak barrels from some of America’s finest Bourbon distilleries which adds an additional layer of flavor to the Cab.
I’ll admit when we have company over for dinner, I often pull out a pasta recipe. Personally, pasta is my weakness, plus it’s easy to make for groups!


Just in time for cooler fall weather, the creamy pasta Carrabba is a take on Chicken Alfredo, with a little flavor punch. Paired with a rich and flavorful Bourbon Barrel Aged Cab or Malbec from Layer Cake, you’ve got a tasty fall weeknight meal.

Creamy Pasta Carrabba
Ingredients
- 3 Chicken breasts boneless & skinless
- 1½ tbsp Butter
- 1 tbsp Olive Oil
- 2 tbsp Shallots chopped
- ½ tbsp Garlic cloves finely chopped
- ½ tsp White pepper
- 1½ cups Heavy whipping cream
- ½ cup Peas frozen or fresh
- 1½ cups White mushrooms sliced
- 1 tsp Kosher salt
- ¾ cup Romano cheese may substitute Parmesan
- 4 cups Fettucini pasta
Instructions
- Wash and pat dry chicken breast, then season with salt & pepper
- Grill or sauté breasts until cooked through
- Slice cooked chicken breasts into 1" long strips, set aside
- Boil a pot of water and toss in Fettuccini pasta
- In a large skillet, heat olive oil and melt butter
- Add in the sliced mushrooms, shallots and garlic
- Sauté on medium heat for 3-4 minutes or until mushrooms have lightly browned
- Add salt, white pepper and whipping cream and raise heat until sauce begins to boil
- Lowe the heat and add in the sliced chicken and peas, incorporating them into the sauce
- Strain pasta and add it to the sauce, stir to mix
- Add Romano cheese to mixture and stir until it begins to melt
